Zarzuela de Mariscos
(Opetetta of Seafood)


    Ingredients (Serves 6)

  • 1 lb Small peeled shrimp
  • 18 Mussels , bearded
  • 1/2lb Bay scallops
  • 1/2 Calamari
  • i/2 Monkfish
  • 2 clove Garlic
  • 1 Onion
  • 6 tbsp Olive Oil
  • 3 Large Tomatoes , peeled and chopped
  • 12oz can Plum peeled tomatoes
  • 2 cups Fish stock
  • 1/2 cup Dry white wine
  • 1 tbsp Chopped Parsley or Cilantro
  • 1 pinch Dill
  • 1 pinch Flaked Dry Chili Pepper; Salt & Pepper

Heat Olive Oil in skillet and add the garlic and chili pepper
As Garlic browns add all Seafood and chopped tomatoes
Toss all ingredients, add wine and simmer for 1 minute
Add fish stock , plum tomatoes , parsley and dill
Simmer for 8/10 minutes until mussels open
Season with salt and pepper
Serve with crusty bread
