Chorizos y Garbanzos
en Cazuela


Ingredients

  • 8 oz. chickpeas (cooked)
  • 8 oz. chorizo (Spanish sausage) - thickly sliced
  • 1 red pepper - roasted, peeled and thinly sliced
  • 1 medium onion - thinly sliced
  • 3 beefsteak tomatoes - peeled, seeded and chopped
  • 1 tablespoon tomato paste
  • 4 fl. oz. chicken broth
  • 1 clove garlic - chopped
  • 1 salt and pepper
  • 2 tablespoon olive oil

Sauté chorizo in oil in pan and remove
add onions and garlic, cook over moderate heat until wilted
add tomatoes, chickpeas, red peppers and chorizo
add stock and bring to boil
add tomato paste and seasoning
simmer on moderate heat for 7-8 minutes.
