Tortilla:
Spanish Potato & Onion Omlet


Ingredients

  • 8 fl. oz. olive oil
  • 4 large potatoes, peeled, and thinly sliced
  • 1 medium onion - thinly sliced
  • salt and white pepper
  • 4 large eggs, beaten

Heat olive oil in frying pan
simmer potatoes in oil for about 10 minutes, then add onions and continue to simmer until soft - do not brown the potatoes
when cooked, strain off oil and save
toss potatoes and onions in beaten egg and season
reheat 2 tablespoons olive oil in non stick frying pan
toss mixture into hot pan
lower heat and gently cook until potatoes begin to brown and mixture sets
next cover the frying pan with a plate and flip the lot over
add one more tablespoon of oil to the pan and slide the tortilla back in
cook for 4-5 min. until golden on the other side
Serve in wedges, hot or at room temperature.
