Crema Catalana
(Catalan Custard Dessert)


Ingredients:
  • 2 Cups Milk
  • Peel from half a lemon
  • 1 Cinnamon stick
  • 4 Egg yolks
  • 8 Tablespoons Sugar
  • 1 Tablespoon Cornstarch

Put cinnamon stick and lemon peel in milk and bring to the boil.
Beat egg yolks and sugar in bowl.
Over moderate heat add strained milk gradually to egg mixture, stirring continuously.
Add cornstarch that has been mixed with a little cold milk (smooth consistency).
Continue to stir until mixture begins to thicken.
Pour the custard into four earthenware dessert dishes.
Cool in refrigerator.
Brown sugar may be caramelized on top before serving with a branding iron.
