Moroccan tomato, vegetable and lamb soup with couscous
Gazpacho (piquant chilled tomato and cucumber soup with cilantro)
Crispy spring rolls of bacalao and spinach with wasabi dill creme fraiche
Rabbit and spinach baked in a canelon with a duo of fresh tomato and smoked cheese sauces
Roasted beets and red apple over dressed organic greens with blue cheese and walnuts

Pan sauteed chicken breast with Marsala braised mushrooms, rosemary roasted potatoes and sauteed spinach
Castilian braised oxtail and boneless beef short-ribs in a tomato ragout over fettuccine
Grilled artichoke, zucchini, asparagus over Israeli couscous with Mediterranean vegetables in almond romesco
Grilled top filet steak with horseradish mashed potato, caramelized onion and creamed spinach
Pesto crusted filet of Gulf of Maine silver hake over scallion mashed potato with balsamic marinated tomatoes
